Diet Pancakes - lactose and glutten free!
I am a big fan of pancakes and at the request of some of my followers, I tried a recipe for diet pancakes. Unlike the classic recipe for American Pancakes, this one does not contain flour or sugar. I consider this recipe to be an healthy alternative, suitable for those who are greedy or on a diet.
I also have some great news for some of you -these pancakes do not contain lactose or gluten! 😍
From the composition that I will present below I got 10 pancakes. Taking into account each ingredient, with the corresponding weight, I came to the conclusion that a pancake has 50 kcal. It may seem lika a lot, considering that even a normal pancake has around 60 kcal, but we have to consider whether these calories are healthy or not. If we think about the classic recipe for pancakes, which contains flour, milk, eggs, sugar, baking powder etc., and the recipe for diet pancakes that containes only bananas, eggs and oatmeal, we can see with the naked eye that the ingredients used are more beneficial for the body.
However, why choose diet pancakes?
First of all for bananas. Although 100 g of bananas have 89 kcal, they have a high concentration of vitamin C and B6, as well as iron, magnesium and calcium. Bananas are also a healthy alternative to give a sweet taste to desserts, as opposed to sugar having also a large amount of fiber that gives the feeling of satiety for longer.
Second, oatmeal is naturally a gluten-free cereal, so it can also be enjoyed by people with diabetes or gluten intolerance. Moreover, oats are very rich in fiber (a cup of oats contains about 16 grams of fiber, representing 66% of the recommended daily allowance). Also, oats are easy to digest, and properly integrated into a diet, it can be the perfect ally to get rid of extra pounds, because of its richness in fiber that reduces appetite.
These are the reasons why you should choose dietary pancakes when you feel the urge for something sweet. Although they are not as aesthetic as the classic pancakes, I assure you that they are delicious and extremely nourishing.
Ingredients:
- 2 ripe bananas 🍌- When I make a banana dessert, I usually take the most ripe bananas from the store, so I don't have to wait for them to ripen at home. Unfortunately, this time they only had fresh bananas 😅
- 50 gr oatmeal - I have been using oatmeal from Sanovita for some time
- 2 eggs
- 1 teaspoon of cinnamon - Of course, if you do not prefer cinnamon, you can remove it or replace it with a drop of vanilla, rum or other essence, according to your taste.
Pancakes can be served plain, with fruit or with dark chocolate topping. I used 20 gr of dark chocolate with 80% cocoa for decoration. Depending on the topping chosen, the pancakes may no longer be lactose or gluten free, so be very careful! (For me, chocolate ended with a lack of lactose 😂)
Method of preparation:
1. Pass the bananas using a fork.
2. Chop the oatmeal so that you get a flour-like composition. You can do this step using a kitchen robot or, if you do not have a kitchen robot, you can place the oatmeal on a flat surface or a chopper, and grind them with a knife (I used this method to grind them and they came out fine).
3. Over the mashed bananas add the chopped oatmeal, eggs and cinnamon, mixing until you get a cream-like composition. The composition obtained is perfect to provide the perfect shape of pancakes.
4. Put a pan on the fire, preferably a ceramic one so you don't have to use oil. I used a non-stick Tefal pan, being my favorite pan that doesn't require oil for any preparation. The fire must be medium to low, so that the dough cooks evenly, without burning on the surface. Put half a polish of the composition in the hot pan and spread it with a spoon until you get the desired shape and size. Bake the pancakes for about 2 minutes. on each side.
For serving you can use fruits, chocolate with over 70% cocoa or honey 🥞.
